Practices – 4C – Sellos Verde This crop is harvested at very high altitudes ranging from 1500 – 1600 meters above sea level. Once the cherries are hand-picked they are fermented 24hrs before the outermost layer of the fruit is carefully removed. The beans are then transferred to vats and undergo a dry fermentation for 48-50hrs allowing the beans to take on a sweet and complex body. After removing the pulp and fruit, the beans are washed and naturally dried under specialized covered drying patios. From there they are sorted again by hand before they are ready for sale.
